Vanilla Frosting

Vanilla Frosting
Makes enough for one layer cake

Ingredients
1/4 c. coconut oil, room temperature
9 T. Earth Balance margarine
11 oz. powdered sugar
1 t. vanilla extract
1 1/2  – 2 1/2 T. almond milk

Directions
1. In a medium bowl, whip the coconut oil and margarine with a hand mixer until completely combined.
2. On low speed, add the powdered sugar a little at a time, until fully incorporated.
3. Add the vanilla then almond milk, 1/2 tablespoon at a time, until the desired consistency is reached.
4. Mix at medium-high speed until frosting is light and fluffy, about 2 minutes.
