Strawberries and Shortcake Forever

By late June, plump, juicy strawberries, are at their peak – the perfect combination of tangy, tart, and sweet that makes you want to eat one after another until your fingers are died red with the juices.  Since they’re native to the US, it’s more than likely our founding fathers enjoyed them.  And, while strawberry shortcake wouldn’t be created until nearly a century after the Declaration of Independence, when I think of treats to celebrate the 4th of July, I always go back to the simplicity of strawberry shortcake.  I like to think Thomas Jefferson and Benjamin Franklin would understand.

    I served this to my guests over July 4th, and they ate every last one! Leftover hot dogs for days, but no shortcake to my chagrin… 😦 This recipe definitely comes to the top of the cookbook!
